As Christmas approaches, it’s time for some fun food! While October is mostly about fun sweets, in December I like to toss in some healthier fare. We all have our favorite Christmas cookies and goodies galore always show up on our doorstep, so I’ve chosen to make my creative edibles meal worthy. Tonight’s creation was a delicious focaccia all dressed up for the holiday. So simple, so festive, so delicious. And other than Malia, who pulled all the peppers of her portion, we felt like the roasting peppers were a lovely addition flavor wise. Decorating focaccia is so easy and so versatile that I suspect it may be a medium I use again.
